This is an egg dish I created inspired by a leftover hamburger patty and my undying love for all things related to tacos. I started this recipe by throwing together a home made taco seasoning, in order to cut all the crap that comes in a packet. Since going paleo, I have been working on replacing all of my spices with organic 1 and 2 ingredient spices instead. Have you ever read the ingredients on the back of your average garlic powder packet? It’s crazy! Now I use one with only 1 ingredient. Garlic!
I followed this easy recipe for the seasoning. It took about 3 minutes to throw together!
This egg dish was fairly quick to throw together with the use of pre-cooked ground beef. If you have none, cook it up first and use the seasoning to add great flavour. If you have some, read on!
Taco Omelette
Ingredients
1 Sweet Potato, peeled and cubed
1 or 2 beef hamburger patties, pre cooked
1/2 a small onion, chopped
1 tomato, chopped
coconut oil
4 eggs
cheddar cheese (optional)
taco seasoning
green onion
Instructions
1. Heat up a medium frying pan and melt about 1 tbsp coconut oil. Toss in the sweet potato, and sprinkle about 1/2 tsp of taco seasoning on them. Cook, stirring often, and using a lid if necessary, until mostly soft.
2. Break up the hamburger patties and toss them in with the sweet potato. Add the onion and tomato, both chopped into fairly small pieces, into the pan. Sauté until both the tomato and onion are soft, and the hamburger has been heated.
3. In a separate bowl, whisk the 4 eggs until they are combined. Pour evenly over the mixture in the pan and place a lid on top to help cook it through. Watch closely until the top of the ‘omelette’ is set. Shred cheddar cheese on top if desired.
4. Sprinkle with chopped green onion for garnish. Enjoy! Serves 2.
This will give you all of those great flavours you might miss from your regular shell tacos, without all the chemicals ad harmful ingredients :)
