Something I’ve been missing with my paleo meals are tortillas. It just isn’t easy to recreate a tortilla without flour. I’ve scoured the internet for a paleo tortilla and I’ve seen a lot of recipes. The thing is though, that those recipes all looked kind of…meh. If you can’t even make your tortilla stick together for a photo I’m not going to waste my ingredients making that. I’d rather use lettuce. #truth
HOWEVER, I finally found a recipe that worked wonderfully and I wanted to give it a little shoutout, because I am so happy I found this recipe! Stupid Easy Paleo’s Tortilla Recipe is really worth trying out if you want a tortilla once in a while! I would at least double it. They ARE freezable, I tried it myself! Defrost on counter, microwave 15 sec, badda boom badda bing! Tortilla.
I may be attempting to tweak them SLIGHTLY to get a more bready flavour, but for now, check them out.
Now, what I ate them with was a really simple recipe one of my followers on either facebook or instagram suggested (I’m sorry I don’t remember!). She told me you can put chicken and salsa in a crockpot, and voila! Of course I needed to fancy it up a bit to my tastes…but not much! This is great! You can eat it in a tortilla, on a salad, with sweet potatoes, or more! Make a big batch, eat it in a different way for days. I ate this for my lunch for 4 days in a row I think? Changing the sides made it stay exciting the whole way through.
- 2 c salsa – I used Costco organic salsa
- 4 chicken breasts (or sub cut of your choise)
- 1 tbsp chilli podwer
- 1 onion, chopped
- Place all ingredients in a crock pot, cook for 8 hours on low.
It’s that easy guys! Perfect for students, busy working moms, busy stay at home moms, dads, ETC! Perfect for ANYONE in a rush, which is likely EVERYONE <3
