Sigh. This salad is amazing, let’s start with that. These photos however? Not so amazing. Do you know how difficult it i to make something like this look good?! GAH! I really wish the pictures could reveal to you the true deliciousness of this recipe. They don’t do it justice. But I must share!

I’m a huge sucker for sweet and savoury. I even had an etsy shop where I sold my own handknits back in the day called sweet and salty knits! I love it that much. So of course a salad with creamy, crunchy, sweet and salty is RIGHT up my alley! This was so amazing I ate it for all three meals one day. No lie. That’s how i know it serves 3. Of me.

This salad features chicken, grapes, celery, pecans, and homemade mayo. Wrapped up in a crunchy piece of lettuce it truly is divine! I wish I had more left right now so I could eat it. It would especially be nice because I am in a rush to get off to work and need something FAST! So without further ado i give you this recipe.

Paleo waldorf Chicken Salad

Ingredients

  • 2 chicken breasts
  • salt and pepper
  • 2 tbsp homemade mayo
  • 1 c sliced grapes
  • 2/3 c sliced celery
  • 1/3 c chopped pecans
  • 1 tbsp lemon juice
  • 1/3 sliced green onion
  • salt and pepper to taste

Instructions

  1. preheat oven to 350. Sprinkle with salt and pepper and bake the chicken breasts for around 35 minutes, until fully cooked. Remove and let cool.
  2. Once cool, chop the chicken. Mix in a large bowl with all other ingredients. Taste and add more salt and pepper as necessary. Serve on lettuce wraps. Serves 3.
