I seriously love pancakes for breakfast and want to eat them all the time. I have fun trying all sorts of combinations and I wanted a book where I can put all of those together and share them with you! There is seriously a pancake for any occasion, and i will NOT put a recipe in there unless it works perfectly. This has left me with 7 different iterations of failed pumpkin pancakes. But that’s ok. It’s all for you guys.
Some of the fun pancakes you can expect are: Baked cinnamon apple pancake for a crowd, upside down pineapple pancakes, savoury ham and chive pancakes served with hollandaise sauce, and MORE!
I was going to have this juuust be a teaser, but you know what, you deserve more than that. So here’s the recipe for the Baked Cinnamon Apple Pancakes. Too many of you requested it on instagram for me to say no.
Baked Apple Cinnamon Pancakes (and e-book teaser!)

- **For the apples:**
- 2 apples, chopped (I use golden delicious)
- 1 tsp coconut oil
- 1 tbsp coconut milk
- 1 tbsp honey
- 1 tsp lemon juice
- 1/4 tsp cinnamon
- sprinkle of salt
- **for the pancake:**
- 1/2 c almond flour
- 1/4 c coconut flour
- 1/2 c water
- 4 eggs
- 1/2 tsp cinnamon
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- Preheat the oven to 350 degrees. In a cast iron skillet, melt the coconut oil and add the apples. Let them cook, stirring frequently, over medium low for about 5 minutes. They should be slightly browning. Add the remaining apples ingredients and let cook down, stirring often, for another 5 – 10 minutes.
- In a medium bowl combine all of the pancake ingredients. Whisk until fully combined. Spread the apples on the bottom of the pan and then pour the batter on top, covering them fully. Bake in the oven for 10 minutes, or until the batter has set. Remove from oven, cool slightly, slice and serve! Makes 6 slices.
