Hey guys! HAPPY MONDAY!
Yep, you heard me right, I said happy Monday.
For a lot of people, Mondays aren’t happy. Mondays are a sign that another terrible work week, filled with stress and fatigue and issues has begun. I definitely feel some of those feelings as I head off to my day job. The thing is though…within myself, I feel good. And that is something that a lot of people DON’T!
I see on my personal facebook page a lot that people are sick and tired of feeling sick and tired. It is SO cliché, but it’s reality for a lot of people. It sucks to read it and feel like you have a secret that people don’t want to hear. I never butt in with my “eat better food” because it NEVER goes over well. That’s why I blog. If you seek me out, I will help you the best I can. Because I have been there, and I have seen the light, and my life has changed.
I’m not saying that we have the cure for all of life’s ailments, but I am saying that it is possible to wake up with energy, and have the motivation to do the things you want to do in life. Anyways, I already ranted about this on my facebook page, but I guess I wanted to say:
If you just stumbled across this page, looking for a yummy chicken recipe, I’ve got you. And you may not believe me but eating good food is the first step to feeling fantastic, so dive right in. I encourage you to explore the paleo and primal movement, and have hope that it can get better for you. I’m not promising a cure-all, but I am promising that if you really try, you will see change in your life.
NOW! Chicken. I’m obsessed with trying to come up with delicious and simple recipes to make this lifestyle as easy as humanly possible. As you all (may) know, I’m working full time, in school, and trying to make something out of this little blog over here, so my plate is pretty full. These types of meals appeal to me and I bet they appeal to a lot of you out there as well!
A note about a special ingredient in this recipe – coconut aminos. Coconut aminos is a great replacement for soy sauce! I’m allergic to soy so for me it is a god send. There are a few companies that make it, but for this specific recipe I used Naked Coconuts. Look out for a review of more of their products from me ASAP! Another brand that may be more locally available for you is Coconut Secret, I’ve seen it in stores in Ottawa and its on amazon!
- 1 lb chicken (I used drumsticks, I bet thighs would be GREAT!) skin on
- ½ c coconut aminos / coconut soy sauce replacement
- 3 large cloves of garlic, minced
- 1 tsp ginger
- 1 tsp salt
- 1 tbsp coconut sugar
- Mix everything together in a bowl except the chicken.
- Put the chicken in the bottom of a crockpot and dump the sauce on top. Mix it up to make sure everything is covered, cover, and cook on low for 8 hours.
- Serve with salad, cauli rice, or your favourite side dish of choice!

PS. The sauce tastes really good on lettuce…anyone else a fan of warm dressings? MMMMMM!
